Old-fashioned homemade buttermilk is the slightly sour, residual liquid which remains after butter is churned, ie. milk from the butter or buttermilk. It wasusually flecked with tiny spots of sweet, creamy butter that didn't quite make it to the top to be skimmed. The flavor of buttermilk is reminiscent of yogurt and most people prefer it well-chilled. You'll find it is slightly thicker in texture than regular milk but not as heavy as cream. It takes one gallon of milk to yield one-half pint of true buttermilk. Nowadays, most commercial buttermilk is made by adding a lactic acid bacteria culture to pasteurized sweet whole milk or, more commonly skim milk or non-fat milk, and it may or may not have added butter flecks. After the addition of the culture, the milk is left to ferment for 12 to 14 hours at a low temperature (optimum 69 degrees F.). It is usually labeled cultured buttermilk and may be salted or unsalted. Most commercial varieties are salted, so check the label if you are on a sodium-restricted diet. Buttermilk history In days gone by, nothing went to waste in the standard homestead, and this included the liquid leftover after churning butter. Combined with natural airborne bacteria, this liquid thickened and soured, taking on a pleasingly tangy flavor. The resulting buttermilk made an excellent addition to biscuits, pancakes, and baked goods. Buttermilk is lower in fat than regular milk, since the fat has been removed to make butter. Those with digestive problems are often advised to drink buttermilk rather than milk, as it is more quickly digested. Buttermilk has more lactic acid than skim milk. You can also add anything else at this stage that seems a good thing, a courgette (zucchini if you're American) or even a chilli chopped very fine. Mix in everything else (LOTS of cinnamon!) and then bring to the boil and cook until the liquid has mostly gone and you are left with a nice thick spicy sauce and the lentils are soft. I find that you usually have to add some boiling water during the cooking. Now you can heat the oven to 200 C, which is errrrrr 400 F, gas mark 6. Cook the pasta till it's just cooked and put it in the bottom of an oven dish, spoon the lentil mix on top and then on the top put the beaten eggs/white sauce mix and then sprinke the cheese (and also some breadcrumbs if you like a bit of a crunch like me) and put it all in the oven for about 30 - 40 minutes or until it's nice and brown on top.

Promotes Antioxidant Benefits Combats Free Radicals Green tea comes mainly from China, Japan, Taiwan and, to a lesser degree, India. The critical difference between green and black tea is that green tea leaves are not allowed to ferment. Green tea is, instead, steamed, rolled and fired. Green tea is the natural dried leaves of the tea plant, Camellia sinensis. Black tea is oxidized green tea. The phrase 'Black Tea' is also used as a generic name for all Camelia sinensis teas. The major Black Tea types, from the traditional black tea evergeen (Camellia sinensis), classified according to processing method, include: fermented, or black, tea, producing an amber-coloured, full-flavoured beverage without bitterness; semi-fermented, or oolong, producing a slightly bitter, light brownish-green liquid; and unfermented, or green, tea, resulting in a mild, slightly bitter, pale greenish-yellow beverage. Tea contains only four calories per cup when consumed without added ingredients but is a source of several B-complex vitamins, including B2 and nicotinic acid. Caffeine is responsible for tea's stimulating effect. Flavor is produced by volatile oils, and astringency and color by tannin. Since green tea, unlike black and oolong tea, is not fermented, the active constituents remain unaltered in the herb. Green tea is bioflavonoid-rich, proven useful for fighting free radical damage in the human body. It has a high content of polyphenols, which are a class of bioflavonoids. To use, unfold the Bag, allowing the extra material to stand straight up. Locate the small foam disk sealed and attached in a plastic housing near the base of the Bag. This disc is the self-healing injector site. Note: The disc will be covered by a small plastic shield. Do not attempt to remove the plastic covering the disc, you will inject through it. Sterilize a small section of the outside of the Bag (on the plastic shield) directly over the foam disc with an alcohol soaked wipe. With the same alcohol soaked wipe, sterilize the needle on your culture syringe. Inoculate the pre-sterilized corn kernals with culture syringe solution by inserting the needle through the plastic shield and foam disc at the previously sterilized spot. Squirt 1-3cc of culture solution directly into the substrate material. DO NOT insert the needle through the white filter patch found near the top of the Bag. Return the inoculated bags back to the shipping box and place in a dark, warm location (species specific). Allow the bag to remain extended so gaseous exchange through the filter patch is not blocked. Because colonization will begin in the interior of the substrate material it may take between 10-14 days for you to notice the spreading of colonizing mycelium towards the outside of the Bag. Speed of colonization is directly affected by incubation temperatures, please check to make sure you are incubating the bag at the correct temperature for the species you are attempting to cultivate. Typical colonization time is between 21-30 days for most species and strains when incubated properly. Once fully colonized the corn kernal spawn may be used to inoculate other bulk mediums such as pasteurized straw, sawdust, hardwood blocks, etc.
