It is used for everything from thyme honey, butter, jelly, vinegars, vegetables, soups to meat and poultry. Thyme gives subtle, pleasing flavor to almost any savory dish, and is particularly nice when cooked slowly. Thyme is one of the key ingredients in bouquet garni, Herbs de Provence and Fines Herbes. In Britain, thyme is the most popular culinary herb besides mint. In Central Europe, Thyme is most used for soups, fish, meat, poultry and eggs. Thyme, particularly lemon thyme, is a great addition to herbal vinegar. Thyme is often combined with marjoram for sausages and goes well with bay or boldo leaves. Cheese is sometimes flavoured with thyme. The Jordan condiment zahtar contains thyme. The Egyptian meat-spice mix Dukka contains hazelnut, sesame, cumin, coriander, black pepper and thyme. A Louisiana Blackened fish recipe includes thyme, salt, red pepper, white pepper, oregano, garlic and onion powder. The fish is dipped into molten butter, then coated with the spice mix and fried very quickly at high temperature in a heavy skillet, without any further oil. The idea is to brown the spices quickly, not burn them. Thyme is common in Central American cuisine. Jamaica Jerk, the delicious meat spice mix, often contains thyme. Bees adore the herb and make exquisite honey with it — thyme was planted as ground cover in Mediterranean orchards to lure them into pollinating the fruit trees. In ancient Greece it was strewn in banquet halls as an aphrodisiac, and distilled into ladies' perfume. Thyme is also a significant medicinal herb. The Sumerians used thyme medicinally as far back as 3000 B.C., and it was amongthe herbs and spices used in ancient Egypt to keep mummies fresh for the afterlife. Thymol, its active ingredient, helps loosen phlegm, combats bronchial spasms, and discourages growth of bacteria. First noted by a German pharmacist in 1725, thymol eventually replaced carbolic acid as a safer, yet effective, antiseptic. Today it's found in such popular over-the-counter products as Listerine mouthwash and Vicks VapoRub. Soap is made by saponifying a fat or oil with a strong alkali. A fat or oil is a triglyceride, which means that three fatty acids of various carbon lengths are attached to a glycerine backbone. The strong alkali is either sodium (for bars) or potassium (for liquids) hydroxide. The saponification process is a simple one-step reaction with no waste generated: the glycerine is split off from the fatty acids, and the fatty acids combine with the sodium or potassium to form soap, while the hydroxide forms water. The result is soap, glycerin and water (no alkali remains). Quality soap-makingconsists in great part in choosing the right proportions of the right oils with their different fatty acids. Most commercial soaps skimp on quality because of cost, and use lots of tallow from beef fat with a little bit of coconut or palm kernel oil. Our unsurpassed soaps use olive, hemp, and palm oils instead of tallow, and use three to four times more coconut oil than commercial soaps. Saponified coconut oil generates high-lather cleansing even in hard water because it has shorter-chain saturated fatty acids. Hemp, olive, and palm based soaps make a mild, smooth, creamy lather, because these oils contain longer chain unsaturated and polyunsaturated fatty acids. Grieve's classic 'A Modern Herbal': In large doses it is emetic and purgative causing a disagreeable, peculiar, burning sensation in the stomach or alimentary canal with considerable prostration of the system; in smaller doses it is an excellent alterative, and influences the secretory functions; it has almost a specific action in the different forms of primary and secondary syphilis, also in skin diseases, scrofula and hepatic affections, acting with most successful results. The fluid extract combined with oils of anise or caraway, proves very beneficial in chronic bronchitis and laryngitis. Some pieces of fresh root chewed daily have permanently and effectually cured these troubles, it is also useful for leucorrhoea. The oil is too acrid for internal use uncombined with saccharine or mucilaginous substance, for internal use the fluid extract or syrup is sufficiently efficacious. As an external stimulating application in most cases the oil will be found very valuable. For croup 1 drop on the tongue three or four times daily, has been found successful for severe attacks. The dried root is said to be inferior instrength to the fresh one, but some chemists consider it more powerful. It may be given either alone or combined with sarsaparilla and other alteratives. It acts reflexly as a sialagogue and expectorant. It is often given for syphilitic complaints in place of mercury. Dosages: Tincture, 1/2 to 2 drachms. Decoction, 1 to 2 fluid ounces. Powdered root, 6 to 10 grains. Solid extract, 2 to 5 grains. Stillingin, 1 to 3 grains. Fluid extract, 10 to 30 drops. King's American Dispensatory, 1898: In large doses, stillingia vomits and purges, producing in many instances a peculiar, disagreeable burning sensation in the stomach, or some portion of the alimentary canal, accompanied with more or less prostration of the system. In less doses it is an alterative, exerting an influence over the secretory and lymphatic functions, which is unsurpassed by few, if any other of the known alteratives. It must, however, be fresh or recent material to be of any therapeutic value, and undoubtedly many of the failures to obtain good results in the use of stillingia are due to the fact that preparations from old and worthless material have been employed. It is an American remedy of much importance and value, and is extensively used in all the various forms of primary and secondary syphilitic affections, in which it appears to have a most decided action; also in scrofulous, hepatic and cutaneous affections, in which its administration is followed by the most successful results (J. King). It has been found very beneficial in chronic laryngeal and bronchial affections, and in leucorrhoea. Because sassafras root contains safrole, it cannot be sold in the US for human consumption. Sassafras root bark may be sold, although it too contains safrole, but it is not very good at providing flavor to the beverage. Sassafras grows wild in much of the Eastern US. Safrole is an MDMA precursor and is itself psychoactive. Sassafras generates an extremely sweet-spicy smoke, useful in smoking meats. American Indians used an infusion of sassafras root to bring down a fever. They also smoked, in a pipe, the root bark, which is highly aromatic and inebriating. Safrole occurs in over 70 essential oils derived from botanical sources (e.g. black pepper, nutmeg). It is a major constituent of the aromatic oil present in sassafras root bark. Despite the reported carcinogenicity of safrole and related compounds, it is known to display antibacterial and antiviral activity. Right before World War l, scientific research discovered that people who drank sassafras root tea were more resistant to severe sore throat infections and colds than those individuals who did not. Continued medical research was interrupted by the war, and later studies were curtailed by the development of modern antibiotics. But finally, research was resumed and it was found that sassafras has a general antiseptic power, and that it also induces the liver to cleanse toxins from the system. A decoction with sugar or honey is said to be good for coughs, wheezing and difficult breathing.' Jamaican Dogwood is a powerful sedative. Dosage should be moderate and experimental – beware of overdose. It is a powerful remedy for the treatment of painful conditions such as neuralgia and migraine. It can also be used in the relief of ovarian and uterine pain. Its main use is perhaps in insomnia where this is due to nervous tension or pain.
