Although in Europe and the U.S. cinnamon is most often associated with sweet dishes, it has broad culinary uses. For example, in India, cinnamon is never used with desserts, but is the main ingredient in curries. In North Africa, not only is cinnamon an ingredient in Raz-el-Hanout, the flavoring of couscous and tagines, but appears also in Berber spices. In Greece, it appears in lamb dishes. And it is an essential spice in Chinese cuisine. Ground, it is one of the constituents of five-spice powder; whole, it is frequently added to flavor braised dishes. In the Caribbean, it is in Jerk seasoning. In Mexico, it appears with chocolate and chili powder in Mole sauces. In the U.S., it is used in barbecue rubs and sauces. Cinnamon is the bark of three bushy evergreen trees of the laurel (Lauraceae) family. The most fragrant and delicate cinnamon is obtained from the Cinnamomum zeylanicum tree native to Sri Lanka (which used to be called 'Ceylon'), the western coast of India (known as the Malabar coast), and Burma. Zeylanicum cinnamon is sometimes called 'true cinnamon' and 'old fashioned cinnamon.' But the 'true' part was just advertising copy for the Dutch East India Company's 17th century monopoly. Cinnamon is also derived from the Cinnamomum loureirii tree native to Indonesia and the Cinnamomum cassia tree native to China, Vietnam, and Sumatra. The cinnamon from the loureirii and cassia trees is darker and more pungent and aromatic than cinnamon from the zeylanicum tree. Cassia cinnamon is what most Americans are used to and is the preferred cinnamon in Southern Europe. So don't let the term 'true cinnamon' confuse you; cassia cinnamon is just as true as zeylancium. Neither Grieve, King nor Felter distinguish the cinnamon varieties medicinally – Grieve simply asserting that they all act alike, and King's covers all varieties in one listing, as 'The barks of numerous species of Cinnamomum.' Medicinally, they all act the same, although there are subtle taste differences. Cassia cinnamon has a more intense and less fragrant aroma than zeylanicum (Ceylon) cinnamon. It is sweet, warm, pungent, and slightly astringent. Zeylanicum (Ceylon) cinnamon is pale in color, and more delicate, more fragrant, not as pungent, and not as sweet. It has a slight citrus flavor. Zeylanicum (Ceylon) cinnamon is more expensive than cassia, and better to use in sweet dishes and cakes. Cassia nips the tongue and is more suited to spiced meats, stews, rice dishes, curries, pancake and waffle batters, cinnamon rolls, and flavored drinks. Cassia cinnamon sticks are reddish brown, thick, and coarse in texture. They are the sticks Americans are accustomed to and use in mulled cider and wine. Zeylanicum cinnamon sticks are palein color, thin, and look like a roll of dried paper; they are delicate and crumble easily. Used as an infusion, decoction, syrup, tincture and ointment. Figwort is useful for skin problems such as eczema, psoriasis and any skin condition where there is itching and irritation. It functions as a systemic purgative and diuretic. It has also been used as a mild laxative in constipation. Grieve's classic 'A Modern Herbal': It has been called the Scrofula Plant, on account of its value in all cutaneous eruptions, abscesses, wounds, etc., the name of the genus being derived from that of the disease for which it was formerly considered a specific. It has diuretic and anodyne properties. The whole herb is used, collected in June and July and dried. A decoction is made of it for external use and the fresh leaves are also made into an ointment. Of the different kinds of Figwort used, this species is most employed, principally as a fomentation for sprains, swellings, inflammations, wounds and diseased parts, especially in scrofulous sores and gangrene. The leaves simply bruised are employed by the peasantry in some districts as an application to burns and swellings. A decoction of the herb has been successfully used as a cure for the scab in swine. Preparation and Dosage: Fluid extract, 1/2 to 1 drachm. King's American Dispensatory, 1898: Figwort is alterative, diuretic, and anodyne; reputed highly beneficial in hepatic diseases, scrofula, secondary syphilis, cutaneous diseases, dropsy, and as a general deobstruent to the glandular system, when used in infusion or syrup. Prof. Goss valued it highly in conditions coming under the head of struma, when the fluids and solids are depraved, andulceration readily follows contusions. Externally, in the form of fomentation, or ointment, it is valuable in bruises, mammary inflammation, ringworm, piles, painful swelling, itch, and cutaneous eruptions of a vesicular character. The root, in decoction, and drank freely, is said, to restore the lochial discharge when suppressed, and to relieve the pains attending difficult menstruation. This plant possesses valuable and active medicinal properties. Its alterative properties are pronounced, though the remedy is very slow to produce its effects. The ballasts manufactured by Control Wizard Products are ETL (Edison Testing Laboratories) listed to assure top performance. Only top quality components are used. We will hold firm to this policy. The heat-sink case or housing that holds the components is made from extruded aluminum. In the extrusion process fins are made. These fins help to transfer the heat from the transformer to the air without the need for air vents. You will find fins like these on high quality stereo gear and used there for the same purpose. You should also note that these ballasts have not been painted. The painting of the heat sink case or housing inhibits the heat transfer process dramatically. Other manufactures that paint their air vent free ballasts for cosmetic reasons run the risks of baking the components. Electrical components work better when they run cool. Slippery Elm Bark is a soothing, astringent demulcent, useful for ulcers, gastritis, colitis, diarrhea and other intestinal problems. A terrific throat-soother in bronchitis (see Grieve's recipe below). It is also an easily digested food for convalescence. Grieve's classic 'A Modern Herbal': 'Demulcent, emollient, expectorant, diuretic, nutritive. The bark of this American Elm, though not in this country as in theUnited States an official drug, is considered one of the most valuable remedies in herbal practice, the abundant mucilage it contains having wonderfully strengthening and healing qualities.' 'It not only has a most soothing and healing action on all the parts it comes in contact with, but in addition possesses as much nutrition as is contained in oatmeal, and when made into gruel forms a wholesome and sustaining food for infants and invalids. It forms the basis of many patent foods.' 'Slippery Elm Food is generally made by mixing a teaspoonful of the powder into a thin and perfectly smooth paste with cold water and then pouring on a pint of boiling water, steadily stirring meanwhile. It can, if desired, be flavoured with cinnamon, nutmeg or lemon rind.' 'This makes an excellent drink in cases of irritation of the mucous membrane of the stomach and intestines, and taken at night will induce sleep.' 'A Slippery Elm compound excellent for coughs is made as follows: Cut obliquely one or more ounces of bark into pieces about the thickness of a match; add a pinch of Cayenne flavour with a slice of lemon and sweeten, infusing the whole in a pint of boiling water and letting it stand for 25 minutes. Take this frequently in small doses: for a consumptive patient, about a pint a day is recommended. It is considered one of the best remedies that can be given as it combines both demulcent and stimulating properties. Being mucilaginous, it rolls up the mucous material so troublesome to the patient and passes it down through the intestines.' 'In typhoid fever, the Slippery Elm drink, prepared as for coughs, is recommended, serving a threefold purpose, to cleanse, heal and strengthen, the patient being allowed to drink as much as desired until thirst has abated, and other remedies can be used. If the patient is not thirsty, a dose of 2 large tablespoonfuls every hour for an adult has been prescribed.' 'The bark is an ingredient in various lung medicines.
