This is Starwest's nitrogen-flushed double wall silverfoil pack. A rhizome with a hot peppery flavor, galangal is used primarily as a seasoning. Greater galangal is also called Laos ginger, Siamese ginger and Thai ginger. It grows throughout Southeast Asia and is particularly popular in Thai cooking. This creamy white-fleshed rhizome is often used as a substitute for ginger. Chinese five spice powder is sometimes enhanced with galangal. Thai Lemon Grass, Galangal & Shrimp Soup: From: 'Simply Thai Cooking' Wandee Young and Byron Ayanoglu 4 cups water 1 stick lemon grass 4 lime leaves (or 2 tablespoons lime juice) 1 inch galangal root (or ginger root) 2 fresh hot chilies 3 tablespoons fish sauce 1 teaspoon sugar 1 ½ teaspoons chili paste 2 ounces button mushrooms, quartered 16 large shrimps, shelled and deveined (10 oz) 3 tablespoons lime juice Fresh coriander leaves 1. Heat 4 cups water in a soup pot to boiling. 2. Smash lemon grass with the flat of a chef's knife once, and then cut into 1-inch pieces; tear lime leaves into thirds; and slice galangal into thin rounds. Reserve these ingredients together. 3. Crush the fresh chilies and cut in half. Reserve separately. 4. When water has boiled, add the reserved lemon grass/galangal/lime leaves. Boil for 1 minute. Add fish sauce, sugar and chili paste. Boil for another 2 minutes. Add mushrooms and boil for 2 minutes. Add shrimps and lime juice (3 tablespoons plus the other 2 tablespoons if you haven't used the lime leaves) and lower heat to medium-high. Cook for2 minutes, just until the shrimps have turned white and springy. Transfer to a soup tureen, decorate with fresh coriander leaves and serve immediately. Quick and easy, this soup depends on its aromatics for its ethereal allure. The barely poached (definitely undercooked) shrimps, however are what make it a treat. A note about this and other soups: lemon grass, galangal root and lime leaves, the trio of flavors that give many Thai soups their distinctive taste are unchewable, but form dictates that they be left in the soup. It is then up to the soup slurpers to avoid eating them. Medicinally Galangal is often served as a tea or decoction. For example, in India, cinnamon is never used with desserts, but is the main ingredient in curries. In North Africa, not only is cinnamon an ingredient in Raz-el-Hanout, the flavoring of couscous and tagines, but appears also in Berber spices. In Greece, it appears in lamb dishes. And it is an essential spice in Chinese cuisine. Ground, it is one of the constituents of five-spice powder; whole, it is frequently added to flavor braised dishes. In the Caribbean, it is in Jerk seasoning. In Mexico, it appears with chocolate and chili powder in Mole sauces. In the U.S., it is used in barbecue rubs and sauces. Cinnamon is the bark of three bushy evergreen trees of the laurel (Lauraceae) family. The foundation of this Mushroom Kit is theWood Based Mushroom Bag. This Bag formula is comprised mostly of a select mix of hardwoods especially formulated for wood loving mushrooms, supplemented with wheat bran, and small amounts of vermiculite for water retention. Each kit will include a 10cc inoculation plunger filled with Agrocybe aegerita culture, ten small Wood Based Mushroom Bags, and a thin plastic, gusseted humidity tent. Each Bag is shipped with all air removed for easy packing. Each Bag contains approximately 1 pound of wet sterilized substrate. To use, simply Unfold the Bag, allowing the extra material to stand straight up. Locate the small foam disk sealed and attached in a plastic housing near the base of the Bag. This disc is the self-healing injector site. Note: The disc will be covered by a small plastic shield. Do not attempt to remove the plastic covering the disc, you will inject through it. Sterilize a small section of the outside of the Bag (on the plastic shield) directly over the foam disc with an alcohol soaked wipe. With the same alcohol soaked wipe, sterilize the needle on your inoculation plunger. Inoculate the substrate (material inside the bag) with the inoculation plunger solution by inserting the needle through the plastic shield and foam disc at the previously sterilized spot. Squirt 2.5cc of the culture solution directly into the substrate material. After injection, remove plunger from hole. The self-healing foam disc will seal the puncture site. Inoculate each bag in this manner, sterilizing the needle of your plunger with an alcohol wipe between each bag. DO NOT insert the needle through the white filter patch found near the top of the Bag. Place the Bag(s) in a dark location and incubate at 70-80F. It is recommend to store the Bag fully extended as developing Mycelia will give off gases that will slowly expand the interior of the Bag. This ballooning effect is crucial for proper air exchange and culture development. Note: During drier summer and winter months it is advisable to store the Bag in a humid location. Excessively dry environments may draw moisture from the Bag. Because colonization will begin in the interior of the substrate material it may take between 14-20 days for you to notice the spreading of colonizing mycelium towards the outside of the Bag. Speed of colonization is directly affected by incubation temperatures, please check to make sure you are incubating the bag at the correct temperature. Modern research has identified Cramp Bark's active ingredients, the hydroquinones arbutin, methylarbutin, as well as coumarins such as scopoletin and scopoline, and tannins, mainly catechins. Grieve's classic 'A Modern Herbal': 'The bark, known as Cramp Bark, is employed in herbal medicine. It used formerly to be included in the United States Pharmacopoeia, but is now omitted though it has been introduced into the National Formulary in the form of a Fluid Extract, Compound Tincture and Compound Elixir, for use as a nerve sedative and anti-spasmodic in asthma and hysteria.' 'In herbal practice in this country, its administration in decoction and infusion, as well as the fluid extract and compound tincture is recommended. It has been employed with benefit in all nervous complaints and debility and used with success in cramps and spasms of all kinds, in convulsions, fits and lockjaw, and also in palpitation, heart disease and rheumatism.' Grieve's classic 'A Modern Herbal': Tonic, alterative, cholagogue (promoting the discharge of bile from the system), laxative and hepatic stimulant. In small doses, Euonymin stimulates the appetite and the flow of the gastric juice. In larger doses, it is irritant to the intestine and is cathartic. It has slight diuretic and expectorant effects, but its only use is as a purgative in cases of constipation in which the liver is disordered, and for which it is particularly efficacious. It is specially valuable in liver disorders which follow or accompany fever. It is mildly aperient and causes no nausea, at the same time stimulating the liver somewhat freely, and promoting a free flow of bile. To make the decoction, add an ounce to a pint of water and boil together slowly. A small wineglassful to be given, when cold, for a dose, two or three times a day. Of the tincture made with spirit from the bark, 5 to 10 drops may be taken in water or on sugar. Euonymin is generally given in pill form and in combination with other tonics, laxatives, etc. Preparations: Fluid extract, 1/2 to 1 drachm. Powdered extract, B.P. and U.S.P., 2 grains. Euonymin, 1 to 4 grains. King's American Dispensatory. by Harvey Wickes Felter, M.D., and John Uri Lloyd, Phr. M., Ph. D., 1898. Euonymus has been in use among physicians for a long time. The bark is tonic, laxative, alterative, diuretic, and expectorant; the seeds are cathartic and emetic. In infusion, syrup, or extract, it has been successfully used in intermittents, dyspepsia, torpid liver, constipation, dropsy, and pulmonary affections. Prof. Locke states" there are but few good stomach tonics, and this agent is one of them." It stimulates the biliary flow, and has considerable anti-malarial influence, and may be used in intermittents after the chill has been broken with quinine. Used as a decoction, extract and tincture. Native Americans Americans have long used the fruit of this shrub for food and harvested honey from its flowers. The 1997 Commission E on Phytotherapy and Herbal Substances of the German Federal Institute for Drugs recommends Saw palmetto berry for 'Urination problems in benign prostatic hyperplasia stages I and II.' 'Daily dosage: 1 - 2 g saw palmetto berry or 320 mg lipophilic ingredients extracted with lipophilic solvents (hexane or ethanol 90 percent v/v); equivalent preparations. Mode of Administration: Comminuted herb and other galenical preparations for oral use. Actions: Antiandrogenic; Anti-exudative.' Benign prostate enlargement appears to be triggered by abnormally high levels of the male hormones testosterone and dihydrotestosterone in prostate tissue. Saw Palmetto reduces absorption of these hormones within the prostate gland, while reducing inflammation and swelling. This reduces bladder obstruction and improve urinary flow. Saw Palmetto prevents the conversion of testosterone to dihydortestosterone, which helps to prevent the development of prostate disease and may also be beneficial for genitourinary problems, endocrine disorders, infertility, impotence, menstrual disorders, ovarian dysfunction, lactation, thyroid deficiencies, and painful menstrual periods. The flower is a good adddition to spicy salads, and it makes a fruity, fragrant smoke, both for meats and fish, and in a pipe. Hibiscus tea does have a laxative effect due to its high content of poorly absorbable fruit acids. Although in Europe and the U.S. cinnamon is most often associated with sweet dishes, it has broad culinary uses. For example, in India, cinnamon is never used with desserts, but is the main ingredient in curries. In North Africa, not only is cinnamon an ingredient in Raz-el-Hanout, the flavoring of couscous and tagines, but appears also in Berber spices. In Greece, it appears in lamb dishes. And it is an essential spice in Chinese cuisine. Ground, it is one of the constituents of five-spice powder; whole, it is frequently added to flavor braised dishes. In the Caribbean, it is in Jerk seasoning. In Mexico, it appears with chocolate and chili powder in Mole sauces. In the U.S., it is used in barbecue rubs and sauces. Cinnamon is the bark of three bushy evergreen trees of the laurel (Lauraceae) family. The most fragrant and delicate cinnamon is obtained from the Cinnamomum zeylanicum tree native to Sri Lanka (which used to be called 'Ceylon'), the western coast of India (known as the Malabar coast), and Burma. Zeylanicum cinnamon is sometimes called 'true cinnamon' and 'old fashioned cinnamon.' But the 'true' part was just advertising copy for the Dutch East India Company's 17th century monopoly. Cinnamon is also derived from the Cinnamomum loureirii tree native to Indonesia and the Cinnamomum cassia tree native toChina, Vietnam, and Sumatra. The cinnamon from the loureirii and cassia trees is darker and more pungent and aromatic than cinnamon from the zeylanicum tree. Medicinally, they all act the same, although there are subtle taste differences. Cassia cinnamon has a more intense and less fragrant aroma than zeylanicum (Ceylon) cinnamon. It is sweet, warm, pungent, and slightly astringent. Zeylanicum (Ceylon) cinnamon is pale in color, and more delicate, more fragrant, not as pungent, and not as sweet. It has a slight citrus flavor. Zeylanicum (Ceylon) cinnamon is more expensive than cassia, and better to use in sweet dishes and cakes. Cassia nips the tongue and is more suited to spiced meats, stews, rice dishes, curries, pancake and waffle batters, cinnamon rolls, and flavored drinks. Cassia cinnamon sticks are reddish brown, thick, and coarse in texture. They are the sticks Americans are accustomed to and use in mulled cider and wine. Zeylanicum cinnamon sticks are pale in color, thin, and look like a roll of dried paper; they are delicate and crumble easily. Raspberries grow wild in the cooler regions of the northern hemisphere and in some parts of the southern hemisphere as well. The ancient Greeks were the first to cultivate raspberries. The wild red raspberry which grows in the United States is sweeter than other species. Raspberry jams, jellies, syrups and vinegars are famous around the world, as are raspberry desserts such as ice cream, sorbet, pastries, and pies. However, a bowl of fresh raspberries may be the best raspberry dessert of all. Most people do not realize all the health benefits raspberries offer. One cup of raspberries contains 31 mg of vitamin C, and it is a good source of vitamins B-12 and B-6. Raspberries are also high in fiber, low in calories and contain no fat or cholesterol. Green tea should be steeped in very hot, but not boiling, water. Boiling water will scorch the delicate flavor, rendering it bitter. Green tea comes mainly from China, Japan, Taiwan and, to a lesser degree, India. The critical difference between green and black tea is that green tea leaves are not allowed to ferment. Green tea is, instead, steamed, rolled and fired. Green tea is the natural dried leaves of the tea plant, Camellia sinensis. Black tea is oxidized green tea. The phrase 'Black Tea' is also used as a generic name for all Camelia sinensis teas. The major Black Tea types, from the traditional black tea evergeen (Camellia sinensis), classified according to processing method, include: fermented, or black, tea, producing an amber-coloured, full-flavoured beverage without bitterness; semi-fermented, or oolong, producing a slightly bitter, light brownish-green liquid; and unfermented, or green, tea, resulting in a mild, slightly bitter, pale greenish-yellow beverage. Tea contains only four calories per cup when consumed without added ingredients but is a source of several B-complex vitamins, including B2 and nicotinic acid. Caffeine is responsible for tea's stimulating effect. Flavor is produced by volatile oils, and astringency and color by tannin. Black teas are classified by geographical origin and the size of the processed leaf. Traditional operations result inlarger leafy grades and smaller broken grades. The leafy grades are flowery pekoe (FP), orange pekoe (OP), pekoe (P), pekoe souchong (PS), and souchong (S). BOP=Broken Orange pekoe; FOP=Flowery Orange Pekoe; TGFOP-Tippy Golden Flowery Orange Pekoe; FTGFOP=Finest Tippy Golden Flowery Orange Pekoe. Green tea is not graded similar to black tea but classified according to age, style of the leaf and manufacture, e.g., Gunpowder, Pan-fired, Young Hysson, Bancha, etc. Since green tea, unlike black and oolong tea, is not fermented, the active constituents remain unaltered in the herb. Green tea is bioflavonoid-rich, proven useful for fighting free radical damage in the human body. It has a high content of polyphenols, which are a class of bioflavonoids. Green tea's best studied polyphenol is Epigallocatechin Gallate. Epigallocatechin Gallate (EGCG), protects against digestive and respiratory infections. A solution of 1 mcg per ml of EGCG heavily inhibited influenza virus in vitro. Green tea is beneficial in reducing the risk of cardiovascular disease as it exerts antioxidant activity, lowers cholesterol and reduces platelet aggregation (stickiness). Green tea extract is very good for the arteries and heart. Additional studies have demonstrated enhanced liver function and immune system function secondary to these polyphenols. EGCG helps block the cancer-promoting actions of carcinogens, ultraviolet light, and metastasis from an original site in the skin, stomach, small intestine, liver or lung. Some authorities attach great value to it as an expectorant in bronchitis, others as a valuable counterirritant when combined with other ingredients in ointment form. It is sometimes given in convulsive and inflammatory disorders such as epilepsy, tetanus, diphtheria and tonsilitis. There is also difference of opinion with regard to its narcotic properties. Where relaxation of the system is required, as, for instance, to subdue spasm, Lobelia is invaluable. Relaxation can be counteracted by the stimulating and tonic infusion of capsicum. It may be used as an enema.' 'Externally, an infusion has been found useful in ophthalmia, and the tincture can be used as a local application for sprains, bruises, or skin diseases, alone, or in powder combined with an equal part of slippery elm bark and weak lye-water in a poultice. Alcohol Free Fluid Extract A Vitalizing Herbal Tonic Famous for its pungent, sweet flavor, licorice is essential in innumerable candy, confection, beverage and sauce recipes, and makes an estimable liqueur. Licorice is also a traditional herbal remedy. The sweet saponin glycyrrhizin occurs in the roots of Glycyrrhiza glabra, the original European source, and in Glycyrrhiza uralensis, Chinese licorice. Authorities treat the two as chemically and medicinally identical. As Grieve puts it, 'The Liquorice of medicine and commerce is derived from the sweet root of various species of Glycyrrhiza, a genus which contains about fourteen species, natives of warmer temperate countries in both the New and Old Worlds...' The 1997 Commission E on Phytotherapy and Herbal Substances of the German Federal Institute for Drugs recommends Licorice root (Glycyrrhiza glabra) 'For catarrhs of the upper respiratory tract and gastric/duodenal ulcers.' 'Side Effects: On prolonged use and with higher doses, mineralocorticoid effects may occur in the form of sodium and water retention and potassium loss, accompanied by hypertension, edema, and hypokalemia, and, in rare cases, myoglobinuria.' 'Average daily dosage: About 5 - 15 g of root, equivalent to 200 - 600 mg of glycyrrhizin; As Succus liquiritiae: 0.5 - 1 g for catarrhs of the upper respiratory tract, 1.5 - 3 g for gastric/duodenal ulcers; equivalent preparations.' 'Mode of Administration: Powdered root, finely cut root ordry extracts for infusions, decoctions, liquid or solid dosage forms for internal use (Succus liquiritiae).
